Diane Shaw’s The Essential Vegetarian Cookbook has to be one of my favorite cookbooks. I have had this cookbook for years and have used it so much that the pages are falling out! That is how much I love this cookbook. It has over 600 recipes that are full of flavor. Shaw is very adept at creating recipes full of spices and herbs that complement each other. There is even a section at the end that discusses the flavor profiles of all the different herbs and spices and how to combine them together in your own recipes. She also includes many tips on how to change the recipes to create something new. In many ways this cookbook also teaches you how to be a chef. Some of the recipes are difficult, but many of them are easy to prepare. There is even a dessert section at the end with lots of scrumptious goodies to make! Vegetarian Cooking for Everyone has been described as the vegetarian equivalent to Joy of Cooking. It is written by Deborah Madison, who is the founding chef of Green Restaurant in San Francisco. In this cookbook Madison has put together 1,400 recipes for the vegetarian cook! You could make a new recipe from this book every day for 2 years and still not have made it through the cookbook! As a chef, Madison knows how to create wonderful recipes. She also knows how to teach the fundamentals of vegetarian cooking, which she explains in her cookbook.
